Yes, this is a great recipe! I just made this one tonight. My wife usually doesn't like Cajun food, but since it's a recipe you posted (she loved your food over the holidays this year), she was willing to give it a shot. I substituted some Cajun-seasoned venison sausage for the smoked sausage simply because I had some and had not found a good recipe for it yet. Everything else was according to the recipe. Yum! It had a tiny bit of heat on the back end, but definitely not too much. IMO, I could have added more heat, even.

So excited for this new development and expansion for you. I know the build-out at the Papa Roux HQuox was something that was going to be great. To bad all of that go ridiculously complicated! Will be glad to have a downtown option though when I'm working for clients in the city!

Already knew some of the people , and ate with a friend from over 20 years ago, and had a blast!
Papa, your message rings true re: how we, as eastsiders, shoot ourselves in the foot by accepting the ordinary and boring or spending money on other sides of town, which only perpetuates the cycle of us being told we're not smart/rich/sophisticated/good enough to have anything 'nice'. As if your food, staff, and sense of humor weren't enough to bring me back frequently, the way you routinely stick up for the "underdogs" makes me a staunch supporter of the Papa Roux Way!

I absolutely LOVE that in the last picture of this great post "all to the glory of God" is so strategically positioned. It is by His power and to His glory that He has brought you on this amazing journey - we are all so proud of you for ALL you've allowed God to do in your life in the past 5 years!
